Recipe Ingredients for Asparagus and pea soup

5 cup Vegetable Stock
2 tbsp Butter
5 oz Peas, Green
12 oz Asparagus
1 tbsp Parsley, Dried
0.5 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
1 tsp Pepper, Black
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Asparagus and pea soup

  1. Melt butter and cook garlic, asparagus, parsley, and peas until soft.

  2. Add stock

  3. Boil, then reduce heat and simmer

  4. Season

  5. Puree and strain

  6. Add cream and lemon zest

  7. Top with cheese
