Herby Asparagus and Courgette Omlette

Recipe Ingredients for Asparagus Omlette

2 large eggs
1 tsp canola oil
5 asparagus spears
1/4 cup chopped courgettes
1 scallion
1/4 cup cooked peas
1/2 cup Scarlet Runner Beans
75 g Potatoes
1 tsp salt
1 tsp chopped mint
1 tsp chopped parsley
1/2 tsp chopped thyme

  1. Pre cook asparagus

  2. Chop sprimg onion and courgette and saute in oil.

  3. Whip eggs and add to pan with seasoning..

  4. serve with other cooked vegetables.
