Omelet with asparagus & goat cheese

Recipe Ingredients for Asparagus Omelet

1 egg white
1 large egg
1 ounce goat cheese
5 asparagus spears
1 teaspoon parsley
1 tablespoon skim milk

Recipe Directions for Asparagus Omelet

  1. Break asparagus into small pieces, put in microwaveable bowl with water and microwave for 3 minutes.

  2. Heat greased omelet pan on stove.

  3. Beat eggs, milk and parsley in small bowl.

  4. Pour egg mixture into omelet pan.

  5. Drop cooked asparagus over eggs.

  6. Sprinkle with goat cheese.

  7. Cook until eggs are no longer runny.
