Recipe Ingredients for Asparagus, Mushroom and Shrimp risotto

12 shrimp Shrimp
1 clove Garlic
8 spear, large (7-1/4" to 8-1/2") Asparagus
2 serving Chicken Broth
1 cup, pieces or slices Mushrooms
1 tbsp Olive Oil
2 cup Rice, White, Short-grain, Cooked

Recipe Directions for Asparagus, Mushroom and Shrimp risotto

  1. heat pan and add olive oil

  2. saute garlic, mushrooms and asparagus (chopped into bite size pieces)

  3. heat a 900 ml container of low or no sodium chicken broth on low heat

  4. add 1 cup of arborrio rice to pan and saute until rice turns white

  5. begin ladeling about 1/2 cup of warmed broth into rice mixture and stir until absorbed

  6. keep adding more broth and stirring when rice is cooked added peeled shrimp and the zest of 1 lemon to the pan

  7. if desired add a tbsp of parmesan cheese.
