Tastes of early summer and autumn combine wonderfully in this surprisingly low-cal risotto!

Recipe Ingredients for Asparagus and mushroom risotto

1 onion, chopped
2 tbsp olive oil
180 g mushrooms, chopped as roughly as you want
330 g asparagus, white, fresh (peeled wight), chopped into biggish pieces
200 g peas, frozen
2 cups rice
1/2 cup white wine
5 cups vegetable broth
1 tsp salt
2 tsp truffle oil
1/2 cup chopped parsley
1/2 tsp ground pepper

Recipe Directions for Asparagus and mushroom risotto

  1. Fry the onion in the ol until soft. Add the rice, stir it vigorously to make sure the oil is spread over as many grains as possible.

  2. Add the wihite wine and proceed in risotto fashion from there.

  3. While the risotto is going, fry the mushromms in a saucepan and set aside. Then, in the same saucepan, boil the asparagus stems.

  4. When they're still quite crunchy add the peas, and after some more minutes the asparagus tips.

  5. When the risotto ist done, stir the vegetables, parsley and seasonings in. Finish with the truffle oil.

  6. Alternatively, you can fry the much more finely chopped mushrooms with the onions and proceed from there.
