Very yummy and easy veggie risotto.

Recipe Ingredients for Asparagus and Mushroom Risotto

2 cups chicken broth
2 cups vegetable broth
4 cups water
1 lb asparagus, trimmed and cut into thirds
4 tbsp. extra virgin olive oil
1 clove garlic, finely minced
1 1/2 cup chopped white onion
2 cups portobella mushrooms, thinly sliced
1 cups long grain white rice
2 tbsp. butter spread
1/2 cup parmesan cheese, grated

Recipe Directions for Asparagus and Mushroom Risotto

  1. Combine water and broths in a saucepan. Bring to a simmer. Add asparagus and cook until tender. (Don't overcook!) Remove asparagus and keep warm. Cover broth to prevent evaporation and keep on very low heat.

  2. In a large skillet heat 2 tbsp. oil; add garlic, onions and mushrooms. Saute until garlic is golden and mushrooms are just tender. Remove from heat and set aside.

  3. In a large pot, heat remaining 2 tbsp. of oil. When hot add rice. Saute over medium heat until rice is lightly toasted (approx. 3-5 min.) Add broth mixture to rice in small cupfulls, stirring often until all broth has been absorbed and rice is creamy and soft.

  4. Add in asparagus, mushroom mixture, butter, and cheese. Stir lightly and serve.
