Recipe Ingredients for Asparagus & Mushroom Polenta Bake

6 oz mushrooms
8 oz asparagus
1 tbsp olive oil
16 oz polenta
1 cup water
1 oz sun dried tomato
1/4 cup parmesan cheese

Recipe Directions for Asparagus & Mushroom Polenta Bake

  1. sautee mushrooms and asparagus in oil for 2-3 minutes

  2. cover asparagus & mushrooms and continue to cook about 5 minutes

  3. mash up polenta in sauce pan

  4. add water and continue to wisk until smooth and hot

  5. stir in the mushrooms, sun-dried tomatoes and asparagus

  6. spoon mixture into casserole dish and sprinkle with cheese

  7. bake for 20 minutes in 425 degree oven
