Asparagus, spring onion and mushroom pasta in light wine sauce. Yummy!

Recipe Ingredients for asparagus and mushroom pasta

1 lb asparagus
3/4 lb mushrooms
2 tbsp extra virgin olive oil
1/4 lb scallions
1/4 cup white wine
1/2 cup chicken broth
2 tbsp butter
1 salt
1 pepper
12 ounces dry pasta

Recipe Directions for asparagus and mushroom pasta

  1. Slice asparagus and mushrooms.

  2. Heat oil in 12 inch saute pan.

  3. Add mushrooms and cook , stirring until lightly browned.

  4. Add onions and cook 1-2 minutes.

  5. Add asparagus and saute 2 minutes.

  6. Add wine and simmer until liquid has evaporated.

  7. Add vegetable broth and bring to a boil.

  8. Add butter and toss until melted into vegetables.

  9. Season to taste with salt and pepper.

  10. Cook pasta and drain.
