8 oz asparagus
4 oz mushrooms
1 tablespoon parmesan

Recipe Directions for asparagus and mushroom frittata

  1. dry roast asparagus , mushrooms and a small spring onion in a medium oven

  2. whisk up 6 eggs and pour over the vegetables

  3. sprinkle parmesan on top

  4. bake around half an hour until brown on top
