Egg white fritatta with asparagus and mushrooms

Recipe Ingredients for asparagus and mushroom Fritata

1 c mushrooms
1 c asparagus
1 egg
4 egg whites
1 tsp olive oil
10 basil leaves
1/2 tsp minced onion
1/4 cup parmesan cheese

Recipe Directions for asparagus and mushroom Fritata

  1. saute the mushrooms and asparagus in olive oil

  2. spread in pie pan

  3. sprinkle chopped basil leaves and onion

  4. whisk egg and whites and pour over the vegetables

  5. sprinkle parmesan across the top

  6. bake on 350 for 35 minute

  7. 4 servings
