Recipe from the Atkins website. Very simple to make and very delicious, hot or cold. Can also be used as a sauce

Recipe Ingredients for Asparagus & Leek Soup

2 tblsp unsalted butter
1 Leek (white part only, halved lengthwise & chopped)
3/4 lb asparagus (cut into 1/2 inch pieces)
1 tsp chopped garlic
14 1/2 ounces chicken broth (reduced-sodium)
1/3 cup heavy cream

Recipe Directions for Asparagus & Leek Soup

Melt butter in large pot over medium-high heat. Add leeks & saute for approx. 3 secs. Add broth to pot & bring to a boil. Lower heat, cover & simmer 8 to 10 min, until the asparagus is tender. Mix in the cream & salt & pepper to taste. Blend the soup in a food processor, blender or use a hand blender, until smooth.
