Asparagus is pared with sweet petite peas and mushrooms carmelized with carrots then topped with a salty parmeasan cheese for an inspired side dish. One a special day add 3 stripes of bacon cut into matchsticks and fried crispy.

Recipe Ingredients for Asparagus Inspired

2 cup Asparagus
1 cup pieces Mushrooms
1 1/4 cup Fresh Frozen Petite Peas
1 cup, chopped Carrots
1 serving la valle extra virgin olive oil
1 tsp Butter
4 tbsp Parmesan, Grated Cheese

Recipe Directions for Asparagus Inspired

2 T of evoo with 1 t of butter in your skillet. Toss in the mushrooms and carrots diced. Stir them about in the skillet to coat and then let them cook together on medium low heat stirring occasionally until carmelized. Cut prepared asparagus into 1 inch pieces and toss into the skillet. Stir about to pick up some of the oil and then cover and cook about 10 minutes for a crunchy texture or longer for your desired texture. Toss in the peas and still it all about. Cover a few minutes while you grate your favorite parmasean reganno cheese. Sprinkle the cheese on top just before serving. For a special and occasional treat, dice 3 strips of bacon into matchsticks and cook until crispy, remove from the skillet and pick up most of the grease with a paper towel. Then begin preparing the recipe. Add the bacon back into the mix at the very end.
