Recipe Ingredients for Asparagus & Herb Risotto

1 lb Asparagus
1 tbsp olive oil
1 tbsp butter
1 1/2 c onion, chopped
2 cloves garlic, minced
2 c arborio rice
1 c white wine
2 tbsp lemon juice
1 3/4 quart chicken stock, hot and infused with 2-3 strands saffron
1 tbsp basil, chopped
1 tbsp chives, chopped

Recipe Directions for Asparagus & Herb Risotto

  1. Trim asparagus and par-cook in oven after spraying lightly with cooking spray. (About 5 minutes at 400 degrees.) Cut into bite-sized pieces and set aside.

  2. In large pot, combine butter and oil over medium-high heat until butter is melted. Add onion and garlic, and cook until tender, about 4 minutes.

  3. Add rice, and stir to coat. Add wine and lemon juice and reduce.

  4. Continue cooking about 20 minutes, adding chicken stock, one ladle at a time, allowing mixture to reduce between each ladle. Stir in Asparagus, basil, and chives with last ladle of stock.

  5. Risotto is ready when the mixture is creamy and the rice is tender but still intact.
