Itallian version of an omlet. Instead of folding the eggs, these are usually opened faced.

Recipe Ingredients for Asparagus Frittata

2 Egg whites
1 garlic clove, minced
3/4 cup asparagus
1/8 cup mushrooms
1/8 cup red pepper, diced
2 tbsp red onion, diced
1/2 tbsp basil, minced

Recipe Directions for Asparagus Frittata

  1. wisk eggs and set aside.

  2. spray skillet with non stick spray.

  3. saute garlic, asparagus, mushrooms, red pepper, onion and basil for about 5 minutes.

  4. gradually pour eggs over mixture and lower head. Cook till eggs are set. Season with salt and pepper to tasete.
