Recipe Ingredients for Asparagus Frittata

2 cups asparagus, chopped
1/2 cup mushrooms, sliced
1 1/2 cups egg whites
2 eggs
1 small tomato, chopped
1/2 cup mozzarella cheese, reduced fat
1 tsp. pepper
1 tbsp. dill weed

Recipe Directions for Asparagus Frittata

  1. Steam asparagus and mushrooms

  2. In large oven proof pan, place blended eggs, egg whites, dill and pepper

  3. Once a little set, add mushroom mixture, tomatoes and cheese

  4. Place under broiler for 2-3 minutes to cook through
