Recipe Ingredients for Asparagus Fritatta

2 eggs
1 c asparagus, chopped
2 T onion, chopped
1/2 T butter
2 T white wine
2 T Parmesan cheese, grated

Recipe Directions for Asparagus Fritatta

  1. Gently saute onions and asparagus in butter until the onions get soft

  2. Pour in the white wine and cover, steaming the asparagus until it's cooked

  3. Whisk the eggs and pour into skillet with onion and asparagus

  4. Cover and cook until set

  5. Sprinkle with cheese and finish under broiler
