5 large Egg, Whole
1 cup Asparagus
5 large Onions, Spring Or Scallions
5 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
3 tbsp Olive Oil
6 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for asparagus fritata

  1. dice asparagus, thinly slice potatoes, finely chop scallions

  2. beat 5 eggs

  3. heat oil over medium flame and cook asparagus, scallions and potatoes

  4. add eggs and cook until eggs are set on the bottom

  5. cover with grated cheese and bake at 400F for 10 minutes
