Recipe Ingredients for Asparagus Flan

1 1/2 lbs asparagus
4 ounces bacon, coarsely chopped
8 eggs
2 cups milk
1 cup heavy cream
8 sprigs fresh parsley, minced
1 salt
1 pepper, freshly ground

Recipe Directions for Asparagus Flan

  1. Cut off the tough ends of the asparagus stalks (about 2 inches). Peel the asparagus. Boil the asparagus in salted water for 5 minutes. Drain and let cool. Chop each stalk into 2-or3-inch pieces.

  2. Sauté the bacon in a nonstick frying pan till crisp. Drain on a paper towel.

  3. Combine the eggs, milk, cream, and halk of the parsley. Season with salt and pepper. Preheat the oven to 350 degrees. Pour the egg mixture in a 9-inch plate, 2 inches deep. Sprinkle in the asparagus and bacon. Bake for one hour, till the custard is set but not dried out. Serve immediately with the rest of the parsley.
