This is a very light and refreshing salad.

Recipe Ingredients for Asparagus, fennel, and hearts of palm salad

3 cups asparagus, cut diagonally
1 fennel bulb
14 ounces hearts of palm
1 tbsp extra-virgin olive oil
1 tbsp freshly squeezed lemon juice
1/2 tsp kosher salt
4 ounces goat cheese
4 cups mixed greens

Recipe Directions for Asparagus, fennel, and hearts of palm salad

  1. Trim the fennel bulb and slice into thin slices, fronds reserved.

  2. Drain and slice the hearts of palm into bite-size pieces.

  3. Blanch the asparagus in boiling water for 3 minutes; place in a bowl of ice water to cool completely. Pat dry.

  4. Combine the asparagus, fennel, and hearts of palm in a large bowl. Add olive oil, lemon juice, salt, and pepper to taste; toss. Sprinkle the cheese into the mixture; gently combine.

  5. Divide the greens among 8 plates. Top with asparagus mixture.
