Asparagus, Chicken and Penne Pasta

Recipe Ingredients for Asparagus, Chicken and Penne Pasta

16 ounce penne pasta
2 tbsp olive oil
3/4 pound skinless, boneless chicken breast
4 cloves garlic, minced
12 ounces asparagus, cut into 1 in pieces
1 tsp crushed red pepper flakes
1/2 cup Parmesan cheese, grated

Recipe Directions for Asparagus, Chicken and Penne Pasta

  1. Cook pasta until al dente, drain and transfer to large bowl.

  2. Heat 1 tbsp olive oil in a large skillet over medium heat. Saute chicken until firm and lightly browned; remove from pan. Add the remaining tbsp olive oil to skillet. Cook and stir garlic, asparagus, and red pepper flakes in oil until asparagus is tender. Stir in chicken and cook for 2 minutes to blend the flavors. Season with salt and pepper.

  3. Toss pasta with chicken and asparagus mixture. Sprinkle with Parmesan cheese.
