Asparagus with beets and olives Vinegrette.

Recipe Ingredients for Asparagus with beets and olives Vinegrette

2 pounds asparagus
1/2 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
2 teaspoons lemon juice
1 tablespoon basil, fresh chopped
1 fresh ground pepper
1 cup onion, green sliced thin
12 ounces beets, sliced
1 cup olives, black cut in half

Recipe Directions for Asparagus with beets and olives Vinegrette

Boil asaparagus 5 minutes. Drain and run under cold water. Add to olives, beets and onions. Whisk all other ingredients and pour over vegetables. Mix and chill.
