An excellent, flavorful Lo Mein that could be made using a wide variety of vegetables. *I have deleted all oil from the recipe.* My children eat this over ramen noodles and I add some of the seasoning packet to the sauce and use the other packet in the water used to cook the ramen. As I am on a low-carb diet, I eat the meal by itself or over miracle noodles.

Recipe Ingredients for Asparagus Beef Lo Mein

1 pound beef
1/4 teaspoon garlic
1 pound asparagus
2 1/4 cups water
5 tablespoons soy sauce
3 tablespoons peanut butter
1 1/2 teaspoon of honey
2 tsp. hot sauce
1/4 tsp. garlic powder
1/8 tsp. white pepper

Recipe Directions for Asparagus Beef Lo Mein

  1. In a large skillet or wok, stir-fry beef and garlic in oil for 5 minutes or until meat is no longer pink. Add the asparagus; stir-fry for 2 minutes or until crisp-tender.

  2. In a small bowl, combine 1/4 cup water and 1/2 teaspoon seasoning from one ramen noodle seasoning packet; stir until dissolved. Add remaining ingredients or store bought hoisin sauce; stir into the beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. (Discard remaining seasoning from opened packet.)

  3. *If desired: In a large saucepan, bring remaining water to a boil; add ramen noodles and contents of remaining seasoning packet. Cook for 3 minutes. Remove from the heat; cover and let stand until noodles are tender. Serve with beef mixture. This can also be served over rice or asian noodles.
