Asparagus and Beef Dijon from "New Dieter's Cookbook" by Better Homes and Gardens, p. 182

Recipe Ingredients for Asparagus and Beef Dijon

2 teaspoons whole black pepper
1 pound beef flank steak, trimmed of separable fat
1 pound fresh asparagus
1 cup sliced fresh mushrooms
1/4 cup thinly sliced green onions
1/4 cup water
1/2 teaspoon instant beef bouillon granules
1/3 cup fat free sour cream
1 tablespoon all-purpose flour
2 teaspoons Dijon-style mustard

Recipe Directions for Asparagus and Beef Dijon

  1. Rub cracked pepper on both sides of steak. place steak on the unheated rack of a broiler pan. Broil 3 inches from heat for 6 minutes. Turn steak over and broil for 6 to 8 additional minutes to desired doneness.

  2. Snap off and discard woody bases from fresh asparagus. In a covered saucepan, cook asparagus in a small amount of boiling water for 4 to 6 minutes or until crisp tender. Drain and keep warm.

  3. For sauce, combine mushrooms, green onions, water and boullon granules in a saucepan. Cook, covered, over medium heat about 5 minutes or until mushrooms are tender. Stir together sour cream, flour, and mustard. Stir in sour cream mixture to mushroom mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.

  4. To serve, thinly slice meat diagonally across the grain. Arrange meat slices and asparagus on dinner plates and serve with sauce.
