A quick and tasty way to get a lot of veggie eaten. High on flavor, low on calories! The ratio of veg to noodle should be about 1:1, but I prefer more veggies than noodles. You'll end up with about 6 cups of this recipe total, once fully cooked. I eat it in 1/2 servings, so that makes 12, 1/2 cup servings. Very filling. It has a strong flavor, so use the chili sauce to fit your taste buds. This dish is way more hearty than its ingerdients may fool you to believe! I came up with it while watching an aerobics program of TV...maybe I'll burn it off with aerobic exercise? Who knows. Enjoy! It's a vegetarian meal, but can easily be transformed vegan by ommitting the 2 eggs and using soba noodles rather than egg noodles and adding some tofu for protien. Or, go carnivore by adding some grilled chicken or beef, whatever suits your preferences/needs.

Recipe Ingredients for Asian Veggies and Egg Noodles

1 cup edamame, unshelled
1/2 cup corn
12 oz egg noodles
2 eggs
2 tablespoons Sweet Chili Sauce
1/16 medium onion, chopped
6 carrots, peeled and chopped
15 oz (1 can) green beans, cut into 1/4" bits
12 tablespoons Soy Sauce
1/2 cup cold water

Recipe Directions for Asian Veggies and Egg Noodles

Cook egg noodles as directed on package and set aside. Chop all vegetables and mix together. Mix the eggs in a seperate bowl. Add water, egg, soy sauce, and chili sauce to a large sauce pan and let bubble. Add vegetables and noodles, one cup each at a time until everything is in the pan. Take off heat and mix well, untill all vegetables and noodles are coated with the sauce. replace to heat and stir quickly. Everything should be cooked within about 5-7 minutes. Remove from heat and serve or store. Can be frozen, but I wouldn't freeze for more than a month. To reheat (from a plastic container) heat container for about 30 seconds, then slide into a bowl or plate and finish heating.
