Recipe Ingredients for Asian Tofu Soup

1 tbsp ginger, minced
4 cloves garlic, minced
1/2 c or 8 shiitake mushrooms, stems removed and caps sliced
15 oz tofu, drained and cut into cubes
8 c vegetable broth
2 tsp soy sauce
3 scallions, sliced

Recipe Directions for Asian Tofu Soup

  1. Prepare the the veggies and tofu in advance.

  2. Combine half of the ginger, the garlic, mushrooms, tofu, broth, and soy sauce in the slow cooker. Cook on low for 6 to 8 hours.

  3. About 30 minutes before serving, add the remaining ginger and cook for 30 more minutes. Taste and adjust the seasonings.

  4. Top bowls of soup with the scallions.
