Recipe Ingredients for Asian Tofu Soup with Carrots, Rice, and Broccoli

1 tbsp ginger, minced
4 cloves garlic, minced
1/2 c or 8 shiitake mushrooms, stems removed and caps sliced
15 oz tofu, drained and cut into cubes
8 c vegetable broth
2 tsp soy sauce
3 scallions, sliced
1 c carrots, chopped
2 c broccoli florets, chopped
4 c cooked rice

Recipe Directions for Asian Tofu Soup with Carrots, Rice, and Broccoli

  1. Prepare the the veggies and tofu in advance.

  2. Combine half of the ginger, the garlic, mushrooms, tofu, broth, and soy sauce in the slow cooker. Cook on low for 6 to 8 hours.

  3. About 2 hours before servings, add the broccoli and carrots to the slow cooker.

  4. About 30 minutes before serving, add the remaining ginger and the cooked rice and cook for 30 more minutes. Taste and adjust the seasonings.

  5. Top bowls of soup with the scallions.
