Yummy, sweet but not too sweet, almost no fat, good fiber and protein.

Recipe Ingredients for Asian Sweet Bean bars

2 cups red beans
8 oz crushed pineapple
1 cup whole wheat flour
1/4 cup cornmeal
1/4 cup sugar
1 tbl baking soda
1 tsp salt
1 cup dates
1/4 cup honey

Recipe Directions for Asian Sweet Bean bars

  1. Soak beans overnight, cook with pineapple and juice with water to cover until soft or pressure cook.

  2. Gently boil dates with honey and water to cover until very soft. Smash with a spoon or puree.

  3. Put dry ingredients in a large bowl, add coooled pureed beans and make a well in the center. Slowly poor hot date mixture in the center and gently fold all together,

  4. Spread in a 9 x 13 inch cake pan and bake at 325 until done.
