A delicate fish dish, a nice change from the traditional kedgeree (Nigella Lawson - Nigella Bites)

Recipe Ingredients for Asian Spiced Kedgeree

4 salmon fillets, no skin
45 g unsalted butter
1 tsp oil
1 onion, chopped finely
1/2 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp turmeric
225 g basmati rice
3 eggs, hard boiled
3 tbsp fresh coriander
2 tbsp lime juice
2 tbsp fish sauce

Recipe Directions for Asian Spiced Kedgeree

  1. Poach Salmon in 500ml of cold water, covered with foil

  2. when cooked drain liquid off into a jug keeping fish warm under foil

  3. melt butter add the oil

  4. soften onion and add spices, then add rice, pour in the reserved liquid, stir and cover with lid and cook for 15 mins

  5. When rice is cooked through, flake salmon and add to pan,

  6. serve with fish sauce and lime juice
