This is a great, light recipe for a very filling soup. It is a lot less salty and more satisfying than most soups from traditional Asian restaurants. Diabetic exchanges: 1 vegetable, 2 lean meats, 0.5 fat. Carb choices: 0.5.

Recipe Ingredients for Asian Shrimp and Vegetable Soup

12 ounces large shrimp, shelled and de-veined
4 green onions
2 teaspoons canola oil
2 medium carrots, peeled and thinly sliced
8 ounces shitake mushrooms, stemmed and coursley chopped
1 teaspoon ground ginger
2 cloves garlic
28 ounces low-sodium chicken broth
1 cup edamame, shelled
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 cup sugar snap peas, trimmed

Recipe Directions for Asian Shrimp and Vegetable Soup

  1. Rinse nad pat dry shrimp, set aside

  2. Diagonally slice the green onions into 1 inch pieces, keeping white pieces away from the green. Set green pieces aside.

  3. Heat oil in pot over medium heat. Add white parts of onion, mushrooms and carrots. Cook 5 minutes. Add ginger and garlic. Cook another minute.

  4. Add chicken broth, 2 cups water, soybeans, soy sauce, snap peas,shrimp and red pepper. Bring to a boil. Reduce heat and cover. Simmer about 5 minutes or until carrots are tender and shrimp are opaque.

  5. Stir in green onion pieces just before serving.
