sweet/spicy bbq shrimp salad, can also be eaten in lettuce cups instead of over salad greens. peanuts can be substituted and cilantro tastes great also!

Recipe Ingredients for Asian Shrimp Salad

1 lb shrimp, peeled
2 tbl orange marmalade
4 tbl hoisin sauce
4 cups chopped lettuce
1 tsp olive oil
1 cup chopped cucumber
2 tbl almond
1/4 cup chopped cilantro
1/2 tsp red pepper flakes
1 salt
1 pepper

Recipe Directions for Asian Shrimp Salad

drizzle oil over shrimp and season with salt and pepper. mix marmalade and hoisin and red pepper flakes together. in hot pan, add shrimp. turn heat down to med/low, allow shrimp to cook half way. turn shrimp over, add sauce and cook shrimp till done. Put shrimp over salad of cucumber, lettuce, nuts, and or cilantro... add 1 ice cube to sauce to cool and thin. use as dressing... OR eat shrimp, cucumber, nuts and cilantro in lettuce cups and use sauce for dipping.
