A zesty and healthy take on an old picnic favorite with an Asian flare!

Recipe Ingredients for Asian Shredded Carrot Salad

5 raw carrots, peeled and shredded
1/2 cup raisins
1/2 cup Pineapple
1 T. rice vinegar
2 T. canola oil
1/8 tsp. garlic granules
1 tsp. finely chopped pickled ginger
1/2 tsp. honey
1/2 tsp. Sriracha Hot Chili Sauce

Recipe Directions for Asian Shredded Carrot Salad

  1. Peel and shred carrots and place in a medium glass mixing bowl. Coursely chop pineapple and add to carrots. Add raisins.

  2. Dressing:

  3. In a small glass mixing bowl, blend together the rice vinegar, garlic, finely chopped pickled ginger, honey and chili sauce. Whisk in oil until emulsified. Pour dressing over carrot mixture and toss well. Cover and refrigerate over night or at least four (4) hours for flavors to meld.
