Light Asian Slaw - good salad with teriyaki

Recipe Ingredients for Asian Shredded Cabbage Salad

3 T lime juice, fresh
2 t sugar
1/4 t salt
200 g green cabbage, thinly-shredded (about 4 c)
130 g carrots, peeled and grated (about 2 med)
180 g cucumber, cut in half lengthwise and thinly sliced (1 small)
1/3 c peanuts, salted chopped
1 T fresh chopped cilantro

Recipe Directions for Asian Shredded Cabbage Salad

In medium bowl, stir lime juice, sugar and salt until sugar is dissolved. Stir in the rest of the ingredients until well mixed. Let stand 30 minutes at room temperature before serving to blend flavors. Can be served at room temp or refrigerated.
