Recipe Ingredients for Asian Persuasion Coleslaw -V A

2 cups green cabbage, finely shredded
2 cups red cabbage, finely shredded
1 carrot, grated
1/2 cup celery, sliced
1/2 cup sweet onion, finely chopped
1/2 cup cilantro, chopped fresh
2 tablespoons dry roasted peanuts
2 tablespoons sesame seeds
1/4 cup seasoned rice vinegar
1/2 ounce apple juice concentrate
1 tablespoon soy sauce
1 tablespoon fresh ginger, minced
1 garlic clove, minced
1/4 teaspoon black pepper

Recipe Directions for Asian Persuasion Coleslaw -V A

  1. Combine cabbage, carrot, celery, onion, cilantro, and peanuts in a large bowl.

  2. Toast sesame seeds in a skillet over high heat, stirring constantly, until they begin to pop and become fragrant, about 2 minutes. Grind in a blender or food processor and add to the salad.

  3. In a small bowl, mix vinegar, apple juice concentrate, soy sauce, ginger, garlic, and black pepper. Just before serving, add to the salad and toss to mix.
