Here it is! I'm pretty sure you can use whatever kind of pear you want though - I used bosc pears (I think lol) since my grocery store was out of Asian pears. and you might want to consider subbing some of the almonds for almond butter since the crust was falling apart quite a bit, so if you're worried about presentation, I think you'd need to add some liquid fat to the crust... or maybe soak the dates before putting them in the food processor so they're a bit more moist, I dunno... BTW, both recipes I sent you are from Vegan Planet by Robin Robertson, if ever you wanted to look into that cookbook for more ideas... its got 400 recipes in it! =)

Recipe Ingredients for Asian Pear Tart with Toasted Almond Crust and Orange-Ginger Glaze

2 cups raw almonds, toasted (in a single layer on a cookie sheet in the oven at 350F for about 10 minutes)
1/2 c dates, pitted
4 Asian pears, peeled, cored and thinly sliced
1 tbsp fresh lemon juice
2 tsp fresh lemon juice
1/4 c light brown sugar or natural sweetener
1/4 tsp ground ginger
1/3 c orange marmalade
1/2 tsp fresh ginger

Recipe Directions for Asian Pear Tart with Toasted Almond Crust and Orange-Ginger Glaze

  1. Preheat the oven to 375F. In a food processor, coarsely grind the almonds. Add the dates and process until thoroughly combined. Press the mixture into a lightly oiled 9-inch pie plate, or springform pan.

  2. Toss the pears with the 2tsp lemon juice and arrange in the crust in a circular pattern. Sprinkle with the brown sugar and ground ginger and bake on the centre oven rack until the pears soften, about 30 minutes. Let cool at room temperature.

  3. In a small saucepan over low heat, combine the marmalade, the 1tbsp lemon juice, and the fresh ginger, stirring until well blended. Brush on the pear slices and serve.
