Recipe Ingredients for Asian Peanut Chicken with Noodles

3 quarts water
3 tablespoons peanut butter
1/4 cup cilantro
1/2 tablespoon lime juice
2 teaspoons low sodium soy sauce
2 tablespoons low sodium chicken broth
1/8 teaspoon red pepper flakes
6 ounces chicken breast
1/2 cup edamame, frozen
4 ounces spaghetti
1 carrot, shredded
2 tablespoons peanuts, chopped

Recipe Directions for Asian Peanut Chicken with Noodles

  1. Place peanut butter, cilantro, lim juice, soy sauce, chicken stock and red pepper flakes in a blender or mini chopper and puree until smooth. Set aside.

  2. Bring water to a boil. Add cicken strips and cook for five minutes. Remove the chicken with tongs, leaving the water in the pot.

  3. Increase the heat to high, when the water returns to a boil, add the pasta and cook 8-10 minutes. Add edamame and cook for 1 more minute.

  4. Remove 1/2 cup of the pasta water and reserve. Drain the pasta and edamame, then return to sauce pan. Reduce heat to medium and add peanut sauce, chicken and shredded carrots and toss wel.

  5. If sauce is too think, add the reserved pasta water, a tablespoon at a time until it reaches the desired consistency.

  6. Divide between 2 plates and top with 1 tablespoon of chopped peanuts to each plate.
