Great summer pasta salad from Pappardelle's Primo Pasta Creations.

Recipe Ingredients for Asian Orzo Salad

1/2 lb pasta, orzo
1 cup tomatoes, seeded and chopped
1 cup cucumbers, seeded and chopped
3 scallions, chopped
1/2 cup parsley, chopped
3 tbsp mint, chopped
1/2 tsp pepper, fresh ground
2 tbsp lemon juice
1/2 tsp salt
1/4 cup olive oil

Recipe Directions for Asian Orzo Salad

  1. Cook orzo in lightly salted water, about 12 minutes. rinse with cold water and drain thoroughly

  2. Combine orzo with tomatoes, cucumber, scallions, parsley and mint.

  3. For dressing, in a small bowl whisk lemon juice, salt and pepper. Add olive oil slowly while whisking. Mix with pasta and serve.
