Slightly modified from a weight watchers recipe based on what was in my fridge.

Recipe Ingredients for Asian Noodles in Satay Sauce

4 oz Carrots
0.5 cup (8 fl oz) Water
1 cup Broccoli
0.5 cup chopped Green Bell Pepper
4 oz Yellow Hothouse Bell Pepper
0.5 cup, chopped Onions
0.5 tsp Ginger, Ground
3 clove Garlic
6 oz dry Whole Wheat Spaghetti
4 tbsp Peanut Butter
3 tbsp Soy Sauce
0.25 cup Lime Juice, Canned Or Bottled, Unsweetened

Recipe Directions for Asian Noodles in Satay Sauce

  1. Bring 1/4 cup of water to boil in a skillet. Add broccoli, carrots and bell pepper. Cover and simmer until tender (about 4 minutes.)

  2. Add onion, ginger, chicken and garlic and reduce heat. Cook, uncovered until onions are softened.

  3. Cook spaghetti according to directions on package and set aside.

  4. Combine remaining ingredients in a bowl with the remaining 1/4 cup of water.

  5. Toss in veggies/chicken mixture and stir to coat. Serve over noodles.
