Recipe Ingredients for Asian Noodle Stir Fry

6 oz rice noodles
8 oz broccoli
1 onion
1 tsp garlic
4 oz asparagus
1 tbsp peanuts
2 oz sugar snap peas
2 oz red bell pepper
1 oz black beans
2 tsp sesame oil
1 tsp olive oil
1 tsp corn starch
2 serving Publix Less Sodium Soy Sauce
1 tsp ginger
1/2 tsp black pepper

Recipe Directions for Asian Noodle Stir Fry

  1. Slice onion into wedges and set aside

  2. Cut broccoli into florets and set aside

  3. Cut asparagus into 2" lengths and set aside

  4. Sliver red bell pepper and set aside

  5. Put sugar snap peas into a dish and set aside

  6. Mash cooked black beans into a paste and set aside

  7. Boil water for the rice noodles. Under cook noodles and set aside.

  8. In noodle pan put oil and garlic and place on high heat. Drop in onions and peanuts when the pan is hot and reduce to medium high. Cook 2-3 minutes.

  9. Drop in broccoli, ginger, black pepper, black bean mash and soy sauce. Stir, cover and cook for 2-3 more minutes. Add water if too dry.

  10. Reduce heat to medium. Drop in Red Bell Pepper slivers. Cover and cook 2-3 more minutes covered.

  11. Add sugar snap peas and asparagus. Stir then plop the drained noodles on top and carefully mix into the vegetables.

  12. Mix corn starch into 1 Tbsp of water and add to the dish. Mix thoroughly add more water if needed.

  13. Reduce heat to low and let stand until ready to serve - best if no more than 5-7 minutes.
