From my friend - great for summer potlucks

Recipe Ingredients for Asian Noodle Salad

3 cups whole wheat spaghetti, cooked
3/4 cup carrots, gratted
1/4 cup green onions, Thinly sliced

Dressing:
1/3 cup soy sauce
1/4 cup white wine vinegar
2 tbsp. chili sauce
2 tbsp. sugar
2 tbsp. sesame oil
1 tsp. ginger powder (I'm a bit generous with this)
4 minced garlic cloves
2 tsp. chili flakes
1 freshly ground black pepper
1/4 cup vegetable oil

Recipe Directions for Asian Noodle Salad

  1. In small bowl, whisk together all ingredients except vegetable oil.

  2. Gradually whisk in vegetable oil in a thin stream. Refrigerate until ready to use, and then whisk again before using. Dressing can be made up to 1 week in advance...flavour improves the longer it sits!

  3. Toss dressing with cooked noodles, carrots and onions. Enjoy!
