Asian Thai fusion lettuce wraps; perfect with small amount of Peanut Dipping Sauce (recipe listed separately)

Recipe Ingredients for Asian lettuce wraps

1/2 c. orange juice
1 T. minced ginger
1 T. minced garlic
3 T. soy sauce
16 romaine leaves
16 oz pork
8 oz water chestnuts
14 oz bean sprouts
1 c. carrots
3 green onions
2 T sesame oil
1/4 t. red pepper flakes
1/4 c. cilantro

Recipe Directions for Asian lettuce wraps

  1. Slice 1 lb. pork roast into thin slices OR leave whole and poke a few holes in it with knife or fork. Marinade in orange juice (or oj/pineapple juice for added flavor), ginger, garlic and soy sauce at least 2 hours, preferably overnight.

  2. Prepare roast in manner desired. If whole, wrap in foil and cook in 350° oven until internal temp of 180° is reached or smoke or grill until desired temp is reached. When meat has cooked, transfer into bowl and "pull" with two forks.

  3. If roast has been sliced, prepare wok or large skillet by heating sesame oil. Add red pepper flakes (or use 1 t. chili oil). When oil has heated, add shredded carrots. Cook until crisp-tender, approximately 5 minutes. Add water chestnuts, canned bean sprouts and green onions and heat mixture through.

  4. Add pork and toss all ingredients thoroughly.

  5. Divide mixture equally onto four serving dishes. Add four romaine lettuce leaves to each dish. Mixture is then spooned into lettuce leaves, rolled up and dipped into peanut sauce, served on side.
