Very light, a little salty, extremely flavorful use of things in your vegetable crisper

Recipe Ingredients for Asian Kale and mushroom soup

1 1/2 c chicken stock
5 cherry tomatoes
1/4 c Kale
1 Carrot
1 c water
1 tbsp fresh ginger
1 tbsp fish sauce
1 tbsp Soy sauce
2 tbsp quinoa
1/2 c sliced mushrooms
1 tsp honey
1 tsp white pepper

Recipe Directions for Asian Kale and mushroom soup

  1. Place stock, chopped tomatoes, water, Kale, Carrot, Water, ginger, fish sauce, soy sauce and quinoa in 2 qt saucepan and simmer for 25 minutes.

  2. (This is good with a garnish of fresh basil.
