To pair with Ginger-Lime chicken. If watching fat/calorie intake, leave out the soy beans.

Recipe Ingredients for Asian-Inspired Salad

3 cups romaine lettuce, shredded
1/2 medium onion, sliced
4 mushrooms
1 cup fresh soy beans
1 cup snow peas
1/2 red bell pepper, julienned

Recipe Directions for Asian-Inspired Salad

  1. In separate pans, steam the snow peas until just crisp and the onions until they start to brown.

  2. Combine all ingredients in a large salad bowl.

  3. Toss and serve with Ginger-Lime Chicken. (Juices from chicken and marinade can be used as the salad-dressing.)
