My version of a tangy, hot and sour soup.

Recipe Ingredients for Asian Hot & Sour Soup

2 cup Tofu, Firm
5 g Shitake Dried Mushrooms
1/2 cup pieces Mushrooms
1 medium (2-1/2" dia) Onions
4 tbsp chopped Shallots
1.5 cup Natural Goodness Chicken Broth
1.5 cup Soup, Beef Broth Or Bouillon
2 tbsp Olive Oil
3 oz Beef, Top Sirloin
3 cup (8 fl oz) Water
1 tsp Pepper, Red Or Cayenne
1 serving Balsamic Vinegar
2 tbsp Vinegar, Cider
3 tbsp Soy Sauce
1 oz Kamut Soba

Recipe Directions for Asian Hot & Sour Soup

  1. Soak the dried shitake mushrooms in hot water for a half hour. Reserve the soaking liquid.

  2. Finely chop your onion and shallot. Cut the tofu up into small cubes. Slice the rehydrated shitake mushrooms into thin strips. Slice the beef thinly.

  3. Heat a large stock pot over medium heat, and add the olive oil.

  4. Add your chopped onion and shallot to the oil and cook until translucent.

  5. Add all of the remaining ingredients to the pot. Also add in the reserved shitake water, being careful to avoid any particles that may be in the bottom of the bowl.

  6. Bring to a boil, and reduce heat. Simmer for about an hour. Add the noodles during the final 10 minutes of cooking.

  7. Serve piping hot. Top with sliced green onion if desired.
