This is a healthy dressing for salads- more like a dip. Works great to make ahead and eat throughout the week with your salads and veges. Makes about 5 1/4 cups. (To last a week, serve 3/4 cups/day)

Recipe Ingredients for Asian Garbonzo Salad Dressing (3/4 cup/serving)

15 oz Chickpeas (Garbanzos)
8 oz Scallion
6 oz Cilantro
3/4 cup Pineapple Juice
1/2 tsp Garlic
3/4 tsp Ginger Root
2 tbsp Soy Sauce

Recipe Directions for Asian Garbonzo Salad Dressing (3/4 cup/serving)

  1. INGREDIENTS:

  2. 3 (15oz) can Garbanzo beans, dried and rinsed.

  3. 6 green onions, chopped

  4. 3/4c fresh cilantro (or 3/4tsp dried)

  5. 3/4c pineapple juice (or orange juice)

  6. 6TBS rice vinegar

  7. 1/2tsp fresh garlic minced

  8. 3/4tsp fresh ginger root, minced

  9. 3/4tsp ground coriander

  10. 3/4tsp ground cumin

  11. 3/4tsp tumeric

  12. 2TBS soy sauce

  13. Place all ingredients in food processor and process until smooth. chill for 2 hrs before serving.
