An easy salad that goes well with spicy food, or grilled meat.

Recipe Ingredients for Asian Cucumber Salad

4 c. cucumber, English, thinly sliced
1 tsp salt
1/4 c. vinegar, seasoned rice wine
4 tsp. sugar

Recipe Directions for Asian Cucumber Salad

  1. Place thinly sliced cucumber in colander set over large bowl. Toss with 1/2 tsp salt and let stand 30 min. at room temperature.

  2. Discard liquid in bowl. Pat cucumbers dry with paper towel.

  3. In 6-in skillet, combine vinegar & sugar; heat to boiling over high heat. Cook until sugar has dissolved. Transfer to bowl and stir in remaining 1/2 tsp salt (optional).

  4. Add cucumbers and toss to coat.

  5. Refrigerate to blend flavors, 1 hour or up to 4 hours.
