A favorite mom made for us. Very mild flavors. We would eat this as part of a meal with rice and stir fry.

Recipe Ingredients for Asian Corn Fritters

4 large Egg, Whole
4 clove Garlic
1 cup Corn, Sweet, Yellow
2 tbsp Soy Sauce

Recipe Directions for Asian Corn Fritters

  1. Thaw corn or remove from cob (do not use canned). Put into a medium sized bowl and then use a potato masher to lightly crush the kernels. The goal is to break up the kernels enough to release the starch and soften them up so they mix better into the egg.

  2. Finely chop garlic and add to the mashed corn. Add the remaining ingredients to the corn and mix thoroughly.

  3. Use a smallish pan that you like for omelets. Heat up (med.) and coat with a little oil.

  4. Add about 1/4 cup of batter to the pan. I use a ladle to measure. Cook like you would an omelet: lifting the edges and flipping when the egg is set to cook on both sides.
