Whole wheat pasta & leftover cold roasted salmon with a zingy Asian vinaigrette.

Recipe Ingredients for Asian Cold Salmon Salad

8 oz whole wheat pasta
1 lb salmon, roasted cold
1 red pepper, diced
1 cucumber, diced
3 scallions, diced
1 tsp ginger, grated
1 tsp garlic, minced
2 tablespoons flax oil
1 tsp chili sauce
1/4 cup low sodium soy sauce
2 tablespoons lime juice
2 tsp honey
3 tablespoons red onion

Recipe Directions for Asian Cold Salmon Salad

  1. Cook pasta according to package directions, I use rotini but any shape you have on hand will do. Soba noodles would be nice as well.

  2. stir ginger, garlic, oil, soy sauce, lime juice and honey together. Add salt & pepper to taste.

  3. Mix vegetables with vinaigrette add warm pasta, break salmon into chunk and mix.

  4. Serve on bed of mixed greens.
