Recipe Ingredients for Asian Cod

16 ounces cod, cut into 4 fillets
6 scallions, thinly sliced
1 tablespoon ginger, minced
2 tablespoons reduced-sodium soy sauce
2 teaspoons dark sesame oil
2 cups white rice, cooked

Recipe Directions for Asian Cod

  1. Put fish in center of 18 x 12 inch foil. sprinkle with half the scallions, the ginger, 1 T of soy and the oil. Make a packet & crimp the ends.

  2. In large skillet, bring 1 inch of water to a boil. Place packet in skillet, reduce heat and steam, tightly covered until the fish is opaque in the center, about 10 minutes. Check for doneness.

  3. With slotted spatula, transfer the fillets and scallions to a platter. Pour any cooking juices and the remaining T of soy over the fillets. Garnish with the remaining scallions. Serve w/ the rice.
