Recipe Ingredients for Asian Cilantro-Peanut Pesto

1 c cilantro
1/3 c roasted peanuts
1 clove garlic
1 tsp grated ginger
2 tbl lime juice
1 tbl fish sauce
1/2 tbl brown sugar
1/2 tsp salt
1/3 c peanut oil

Recipe Directions for Asian Cilantro-Peanut Pesto

In a food processor or blender, combine the cilantro, peanuts, garlic, ginger, lime juice, fish sauce, sugar, and salt. Wile you process, slowly pour the peanut oil into the mix until all the ingredients turn into a smooth paste, scaping the sides occasionally. Store in the refrigerator, covered, for up to 3 days, or freezer for 3 months
