This recipe is from Anne Lindsay's New Light Cooking, p161. If you do not have mirin (rice wine), substitute with scotch or sherry. If you do not have chili paste, use 1/2 tsp hot pepper sauce. Chicken should be skinless but bone-in, cut into drumsticks and thighs. "I've updated one of my favorite ways to cook chicken by adding five-spice powder and hot chili paste. Sometimes I add chopped garlic. I like to serve this over precooked chow-mein-type Chines noodles (not the canned fried ones) that I mix with bean sprouts and green onions and either the sauce in this recipe (I often make extra) or hoisin sauce."

Recipe Ingredients for Asian Chicken (New Light Cooking)

5.333 tbsp Hoisin Sauce
2 serving Mirin
1 serving Soy Sauce
3 tsp Ginger Root
0.02 cup Chili Paste
1 1tsp Oil, Sesame
0.33 serving Five Spice Powder
4 medium (4-1/8" long) Onions, Spring Or Scallions
6 leg, bone and skin removed Chicken, Leg, Meat Only

Recipe Directions for Asian Chicken (New Light Cooking)

  1. In small bowl, mix hoisin sauce, rice wine, soy sauce, minced ginger, chili paste, sesame oil and five-spice powder. Place chicken in baking dish; brush with hoisin mixture. Cover and refrigerate for 1 hour or for up to 24 hours.

  2. Bake in 250F oven, basting occasionally, for 40 minutes or until juices run clear when chicken is pierced. Serve sprinkled with green onions.
